I've read lots of advice online about the contents of a cover letter to an agent. Many suggest including the reason to submitting to that particular agent (as well as info about the book and myself).
I've looked at lots of agents' websites, and read the profiles of individual agents, searching for something that is different about a particular agent to explain why I am sending to him or her. But I'm still not sure what I should write.
Can I ask for some examples of what sentence (about your choice of agent) you have included in your cover letters?

I find cover letters really difficult to write, trying to pitch them to each individual agent. That being said, I've used sentences like:
'You represent some of my favourite authors and to be considered in their company would be fantastic' (that got me a personal response)
'I notice you represent X and think (my book) would appeal to a similar readership' (positioning myself without saying my book is like someone else's)
In agent profiles they often put the kind of thing they are looking for, so you can refer to that as well ie 'you state you're looking for fantastic happenings in ordinary places, so my book might appeal to you.'
And I agree with Paul that you need to include an elevator pitch as well.
